Technologies

Our production process combines traditional and modern breeding techniques. We utilize Recirculating Aquaculture System (RAS), cage culture model and state of the art seaside tanks to provide a “happy growing” environment for sturgeons. 


Within the RAS system, freshwater from the Kura River is recirculated during incubation and early stages of fish life.  Besides providing good water quality and nutrition, the RAS system creates a stress-free environment for the fish to grow.

 

At the same time, saltwater from the Caspian Sea is used for removing off-flavors by purging the fish before the harvest and ensuring the caviar taste is indistinguishable from the wild catch. During the purging process the fish are moved to temperature controlled clean water and kept without feed to cleanse impurities.

 

Adopting a combination of saltwater and freshwater cycles enables us to recreate the natural habitat of the fish as well as supply the global market with sustainable caviar produced in an ethical and eco-responsible manner.

 

It is worth mentioning that, in Azerbaijan, the ability to purge the fish in the saltwater from the Caspian Sea before the harvest is a unique capability only available to Azerbaijan Fish Farm.


Packing

We sell in bulk and pack as per your requirements. 

Packing services are provided free of charge as a complimentary customer service.

We pack caviar in metal tins from Desjardin, glass jars or Italian master-packs.

Metal tins: 50g, 125g, 250g, 500g, 1000g

Glass jars: 113g 


Storing caviar

Caviar can be kept in a refrigerator unopened for up to 4 months after the production date. However, once opened, we recommend leaving it in the refrigerator for up to 3 days. During this period, to pursue the best quality preservation, the best temperature for storing caviar would be between -4°C and -2°C. One of the best solutions is to place it in the coldest area in the fridge (usually, it is by the bottom), but never freeze caviar to maintain texture and taste. 


Sustainability Initiatives

Baku Caviar is proud to be the first producer of sustainable caviar in the Caspian region. We partner with international conservation organizations, including the Blue Marine Foundation, to support the creation of marine reserves in the Araz and Kura estuaries. These initiatives are dedicated to the preservation and restoration of native sturgeon populations.
